Recipe: Japanese Chicken Salad

Ensalada-Japonesa-de-Pollo

Ingredients for 4 people:

  • 400 grams chicken mince
  • 8 tablespoons soy sauce
  • 2 tablespoons minced fresh ginger
  • 1 onion, chopped
  • 4 tablespoons bread crumbs
  • 1 yolk
  • 1 egg white
  • 1 cup sesame seeds
  • vegetable oil
  • 1 tray shiitake mushrooms (if you buy dried mushrooms you need to put them in water for about 30 minutes before using them)
  • salt and pepper
  • 10 radishes, sliced
  • 1 pack sprouts (or young spinach)

For the vinaigrette:

  • 3 tablespoons sunflower oil
  • 2 tablespoons cider vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame seeds
  • ½ teaspoon sugar
DIRECTIONS
  1. Combine chicken mince in a bowl with soy sauce, ginger, onion, bread crumbs and yolk. Place mixture onto chopping board in rectangular form and cut in small dices.
  2. Cover every dice first with egg white and then with sesame seeds. Fry in vegetable oil over low heat.
  3. Slice shiitake mushrooms, fry in oil and add salt and pepper.
  4. Combine sprouts with radishes and mushrooms.
  5. Combine all vinaigrette ingredients and serve with chicken salad.
